Cooking lunch

Cooking a simple Bok choy and mushroom dish is quick and easy. Bok choy being utilized by countless asian recipes is my go to for a flavorful fast lunch.

Ingredients needed:

Bok Chok (washed)
Mushrooms (washed)
Garlic
Green onion
Cilantro
Soy sauce
Sesame seed oil
Dark soy sauce

I cook some rice fresh before stir frying the veggies.
I also add cooked tofu into the mix.

Steps to cook:
Add a tbs of olive oil to frying pan
Chop off white stock of bok choy leaving the leafy side for later
We need to cook the dense veggies first
Chop bok into quarter inch slices
put in the pan on medium heat
Add in green onions, I am out of onions so I will use yellow zucchini instead
Add in sliced mushrooms and cook for 5 minutes

Next add in chopped garlic and the leafy greens of the bok choy.
Stir around for 2 minutes then add a dash of soy sauce.
The idea here at sauce time is to know some flavor will cook off early. We want to add more soy sauce and sesame seed oil at the end to retain the final flavor.
Then add a side of cooked tofu and steaming hot rice.
Top with Cilantro and serve.
